We love using Fijian products, and we love a good Espresso Martini, but capturing that flavour from locally grown coffee proved a challenge. We sourced local suppliers of Fijian grown coffee beans and spent an inordinate amount of time working out how to produce a product that we would like to drink.

We tried cold filtered, we tried straight espresso… and after multiple attempts, and many many months of frustration, we created a unique process that gave us the taste profile we had been searching for.  The resulting creation is a totally Fijian product that is rich and dark, perfect on the rocks, or as part of a more complex cocktail.
