Vatukarasa is a village on the Coral Coast of Fiji where we bought the first pineapple that inspired this tropical treasure. If you are not a Martini drinker this delightful tropical version will change your mind.
It is relatively simple recipe that marries the sweetness of the pineapple perfectly with Blue Turtle Gin and the acidity of lime. It is very important that you use fresh pineapple and fresh lime juice to achieve the brightness that this cocktail deserves.
Ensure to chill your Martini glass prior, pop it in the fridge with a few ice cubes whilst you assemble.
Add a generous amount of solid ice to your cocktail shaker (ice that is not solid will melt too quickly and ruin the taste).
Add vermouth, Blue Turtle, lime juice, and pineapple juice to shaker.
Cap and shake vigorously to chill the Martini and create foam. Strain into chilled Martini glass. Garnish with lime wheel or pineapple.
